SERVE IN ANY AMOUNT
When all else fails, this is one of the easiest and most appreciated appetizers. It is especially useful if guests tend to gather around in your kitchen while you are finishing dinner preparations. Purchase several different cheeses, soft and hard. A brie is always good. I prefer one with herbs and garlic. Cheese balls are also good, whether purchased or homemade. Cheddar is safe for those who do not care for exotic cheeses. I love a good Swiss, such as Jarlsberg. The choices are endless. As for crackers, use a variety. You will definitely want some plain-flavored, such as water wafers. Triscuits are good with many cheeses. Mix and match as you like. Place the cheeses on a large cutting board, surround with the crackers and let your guests cut their own. A bowl of nuts and/or olives is a good accompaniment.
