These recipes are some of my family's favorite fillings for party or tea sandwiches. Use thin sliced white, cracked wheat and/or pumpernickel bread. Sandwiches may be prepared ahead. Trim crusts from bread slices. To prevent the bread from getting soggy, thinly spread each slice with butter or mayonnaise before filling. Cut each sandwich diagonally into 4 quarters. Wrap in waxed paper then a damp paper towel to keep moisture in, put into plastic storage bags and refrigerate until serving.
Note: All of the fillings may also be used as spreads on crackers or vegetables.
