MULTI-GRAIN SANDWICH BREAD BM

The flour used in this recipe is specifically designed for bread machines, processors and mixers. It is not recommended to make this by hand unless you plan to knead the dough very vigorously for a long period of time. The texture is wonderful for toast and sandwiches. Don't cut down on the salt. I tried that twice and the bread failed to rise when baking. I have listed ingredients for either a 1 or 1-1/2 pound loaf. I prefer the texture of the smaller loaf, and it makes an average-sized sandwich.

INGREDIENTS

For a 1 pound loaf

  • 1 tablespoon plus 1 teaspoon warm water
  • 2/3 cup warm milk
  • 2 tablespoons butter, melted
  • 1 tablespoon plus 2 teaspoons sugar
  • 1-1/3 teaspoons salt
  • 1-2/3 cups bread machine flour
  • 1/2 cup 8-grain or other grain flour
  • 1-1/2 teaspoons active dry yeast

For a 1-1/2 pound loaf

  • 2 tablespoons warm water
  • 1 cup warm milk
  • 3 tablespoons butter, melted
  • 2-1/2 tablespoons sugar
  • 2 teaspoons salt
  • 2-1/2 cups bread machine flour
  • 3/4 cup 8-grain or other grain flour
  • 2-1/4 teaspoons active dry yeast

Add the ingredients in the order given or as indicated for your machine. Use the basic white setting for light crust. Bake according to manufacturer's instructions.
