MAKES SIXTEEN 2-INCH SQUARES
This is based on Derby Pie. I just don't always want the extra calories in a crust, so I baked it as a cake and served in squares. It is really good and very easy.
INGREDIENTS
Preheat oven to 350° F. Generously butter an 8 x 8-inch cake pan. Beat eggs lightly in a medium bowl. Stir in the sugar, then the flour until well-combined. Add the vanilla and stir again. Stir in the melted butter until combined. Stir in the walnuts and chocolate chips. Pour into prepared pan and bake for approximately 30 to 40 minutes, or until tester inserted in center of cake comes out clean. Place on rack to cool fopr at least 10 minutes. Serve warm or room temperature, with whipped cream or ice cream if d,esired.
Notes: Toast the walnuts in a 350° oven until lightly browned, about 10 minutes, being very careful not to get too browned. Cool before using.
