MADGE'S ORANGE CAKE

SERVES 10-12

This is another cake from my mother's friend. She made the best unfrosted tube cakes.

INGREDIENTS

Preheat oven to 350° F. Grease and flour the bottom of a tube pan (can use a loaf pan). Cream together the sugar and shortening. Add the eggs and beat well. Add the orange rind and orange juice. Mix together the flour, salt and baking powder. Add to batter, alternating with the milk, beating well after each addition. Pour into prepared pan. Bake for 25-35 minutes or until cake springs back to the touch. Remove from oven and cool on rack for 10 minutes. Remove cake from pan and cool completely before serving.
