Spiced Tapioca Pudding
I really love tapioca pudding and, for whatever reason, do not make it very enough. This recipe is a quick, easy, relatively healthy and deliciously creamy dessert for a family meal or special occasion. Depending on the brand of tapioca, there will be instructions for quick or regular cook methods. I usually use the quick method to make the pudding for this recipe, but either is fine.
Make the tapioca pudding according to the package directions for 4 servings, adding the following:
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground mace
- 1 teaspoon grated orange rind
Serve chilled or room temperature. If desired, garnish with orange slices or segments.
Notes: This recipe can easily be altered to taste. Other spices can be added, such as nutmeg, ginger or cardamom. You can top the finished pudding with other fruit or berries. Be creative and enjoy.
