EGGS FRIED IN OLIVE OIL AND GARLIC

I just love an occasional fried egg for dinner. This is a great meat substitute that is healthy, quick and easy. How much garlic you use depends on taste.

INGREDIENTS

Heat the olive oil over medium-high to high heat in a skillet large enough to hold the 4 eggs. Add the garlic, then break in the eggs. (Be careful not to burn the garlic. It is good if it turns slightly golden. If you are making several batches of eggs in a smaller pan, use only a portion of the garlic and remove it from the pan, adding fresh before cooking the next eggs.) If desired, flip the eggs when browned to make them over light. Fry until desired doneness. Serve immediately, sprinkling with salt and pepper. Drizzle some of the oil from the pan on toast as an accompaniment.
