SERVES 2-3
I have always liked regular brown long-grain rice, but the brown basmati rice is even better, with a wonderful, nutty flavor. This recipe is very easy and versatile. Add whatever herbs or spices you prefer, especially to compliment the entree.
INGREDIENTS
Heat a small saucepan over medium heat. Add oil, then the onions and peppers. Sauté until slightly tender, about 4 minutes. Add the garlic and sauté another minute. Add rice and cook until lightly browned, about 2 minutes. Add oregano, parsley, water, salt and pepper. Turn heat to high and bring to a boil. Reduce to low heat, cover, and cook until done, about 45 minutes, or according to package directions. Remove from heat and let set, covered, about 7 minutes. Fluff with fork and serve.
