This is an easy, healthy and delicious side dish for a sandwich or any meal. I always make this recipe when I have some leftover Basmati Rice Pilaf, but you can make it from scratch. However, you must either add the vegetables as in a pilaf, or sauté a few to add to the rice. Of course, you may use any long-grain rice, but the basmati has a wonderful nutty flavor. This recipe may be made in any amount.
INGREDIENTS
Beat the egg white in a medium bowl. Add the remaining ingredients and stir to combine. Place on a baking sheet lined with parchment paper, or foil that has been sprayed lightly with cooking spray. Pat thinly into a rectangular shape. Refrigerate for at least one hour. Preheat oven to 450° F. Bake for about 10 minutes to heat, then place under the broiler until brown and crispy. Cut into squares or rectangles and serve hot or room temperature.
