Lamb and Veal Recipes

This is a personal family collection of recipes for lamb and veal, a few of which came from my mother, some my versions of classical dishes and others of my own creations. Lamb is probably my favorite meat, with veal running a close second. Unfortunately, both are relatively expensive, especially veal. I keep an eye out for sales and, if I don't want to use it that day, freeze it for later use. Depending on the cut, both meats are great grilled, roasted, braised or sautéed. I have included game meats on this page. At this time, I have a recipe for Braised Rabbit and more will follow as additional farm-raised varieties become available in my area.
