LAMB, VEAL AND GAME MEAT RECIPES

Lamb is probably my favorite meat, with veal running a close second. Unfortunately, both are relatively expensive, so we don't have it as often as I would like. I keep an eye out for sales and, if I don't want to use it that day, freeze it for later use. Depending on the cut, both meats are great grilled, roasted, braised or sautéed. I am starting to experiment with game meats as the farm-raised varieties become more available.
