Recipes for Leftover Eggplant
Eggplant is very versatile so leftovers work well in many presentations. Here are several examples of my favorites, all of which are quick, easy and just as delicious as the original dishes are first time around.

This idea really did not take much thought. The Eggplant Stew, with its tomato broth is a natural for Pasta with Eggplant. Just add some garlic and oregano. Reheat and toss with hot pasta. If you do not have quite enough for the amount of pasta you need, add more tomatoes and seasonings.
- My Light and Easy Eggplant Parmesan recipe is one of my favorite leftovers. Serve warm or at room temperature in a sandwich with Italian bread or rolls. Add your favorite cheese, such as mozzarella, provolone or asiago. If desired, place under the broiler to melt to cheese.
- Just like the previous examples, Caponata, an Italian eggplant spread, is delicious either with pasta or in sandwiches. It is also very good added to soup.
