(1) This really didn't take much thought. The Eggplant Stew with its tomato broth is a natural for Pasta with Eggplant. Just add some garlic and oregano. Reheat and toss with hot pasta. If you don't have quite enough for a pound of pasta add more tomatoes and seasonings.
(2) The Light and Easy Eggplant Parmesan is great leftover at room temperature as a sandwich in Italian bread or rolls. Just add some sharp, mozarella, provolone, fontina or asiago cheese.
