LEFTOVER Cooked Greens
(Any cooked, steamed or sautéed greens can be used.)

(1)   Chop some onion and carrot. Sauté in a soup pot with a little olive oil. Add some minced garlic. Add water and/or chicken broth. Simmer about 20 minutes, then add leftover cooked greens, small pasta such as ditalini and some frozen corn. Simmer until pasta is cooked. This makes a delicious and healthy Greens Soup. The more greens, the better.

(2)   Add some garlic and use as a sauce with cooked pasta. You now have Pasta with Greens.

(3)   Heat in a skillet and top with eggs. Cover and simmer until eggs are set. You now have Poached Eggs Over Greens.
