LEFTOVER Liver and Onions

 

(1)   I love liver and onions. Where I live now, liver is purchased in pre-packaged amounts. If that third person doesn't get home to eat it, you've got leftovers! Not my favorite thing to just reheat. So, the solution I have found is to cut the meat into thin slices and add to freshly made tomato sauce and serve with Fettucini. Remember to put the liver in the sauce just long enough to reheat so it doesn't toughen.

(2)   This idea comes from Amy Griffis. "Make a Liver Pate from leftover cooked liver and fried onions. Remove the excess cooking fat when cold. Add an equal amount of softened cream cheese, 1 minced raw onion, garlic, minced or powder, to taste. Put into a food processor and process until desired consistancy. I made mine quite smooth. Can be left a little chunky. It's good as cracker spread."
