Recipes for Leftover Mashed Potatoes
I must admit that I do not make mashed potatoes very often. When I do, there is not much leftover, and they reheat well in the microwave. However, there have been occasions when I made too much, and one of those times I came up with the Pierogie Casserole linked below. It is so good that I sometimes make the whole thing from scratch with freshly mashed potatoes. Of course, shepherd's pie is classic when you also have leftover meat. Potato cakes are a favorite for a lot of people, so I have included a shared recipe from a visitor.
- One of my favorite uses for leftover mashed potatoes is Pierogie Casserole, a delicious combination of lasagna noodles, potatoes and lots of cheese.

- If the mashed potatoes were a side dish to a roast that is also leftover, make Shepherd's Pie. Mix the meat and any vegetables with a little gravy and place in a greased baking dish. Top with a layer of the mashed potatoes. If desired, grate some cheese on top. Bake in a 350° oven until hot and bubbly, about 20 minutes. This works equally well with leftover mashed white or sweet potatoes. You can also brown ground beef if you do not have meat leftover.
