LEFTOVER Creamy Orzo and Rice

 

The last time I had this leftover, I also had some Spinach with Olive Oil and Garlic. I cooked a couple chicken thighs in low-salt chicken broth flavored with onions, garlic and white wine. When the chicken was done and deboned, I returned it to the pot with the leftovers and heated through. It was as good as soup made from scratch.
