Chances are you will only make paella for a crowd and there will be little or no leftovers. However, if there is enough and you don't want want it exactly the same way or you need to stretch it the next day, make Paella Soup. I sauté some onion, green pepper and garlic in a little olive oil. Then I add a little dry sherry, canned whole tomatoes slightly crushed, broth (you can use fish or chicken), and a few of the seasonings in the original dish. Bring it all to a boil, then add the leftover paella and simmer just until heated. It's delicious. By the way, when I did this the paella did not have mussels. I would suggest removing the shells before making the soup.
