Recipes for Leftover Sauerbraten

Chances are that, when you make a traditional German Sauerbraten meal, you will have leftovers. They can be reheated, but why not try something different. The combination of beef roast, cabbage and spaetzle makes a delicious soup that is especially useful when you need to stretch the leftovers to feed the family. - Make Beef Soup by using the leftover meat, sauce, cabbage and spaetzle. Add broth or water as needed. It is delicious.
- Make Beef Sandwiches with the meat using rye bread or crusty rolls, Swiss cheese and whole grain mustard. If you have cabbage and spaetzle leftover, mix them together and serve warm as a Sweet and Sour Slaw.
