Tomato-Based Barbecue Sauce
Makes 1-1/2 cups sauce
This is one of my favorite tomato-based barbecue sauces. It can be used for chicken, beef or pork. It can be made ahead and in any amount needed. See the East Carolina Vinegar-Based Barbecue Sauce recipe in the similar and related recipes links for something very different and equally delicious.
Ingredients
- 2 tablespoons ham fat, bacon grease, vegetable oil or butter
- 1 cup chopped onions
- 3 tablespoons dark brown sugar
- 2 teaspoons dry mustard
- 3 tablespoons Worcestershire sauce
- 1 cup ketchup
- 1/4 cup apple cider vinegar
- 1/4 cup water
- Salt and pepper to taste
Heat the fat in a small saucepan over medium heat. Add the onions and sauté until lightly browned. Add remaining ingredients. Bring to a boil, reduce heat and simmer, uncovered, for approximately 5 minutes. Taste for seasoning. Cool before using. (Sauce can be refrigerated for up to one week or frozen for one year.)
