ONE CHOP PER PERSON
This is simplicity at its best. Because of the high price of veal, we don't have it very often. When I do find chops on sale, I look for some nice thick ones with the loin in place. Then, to enhance the delicate flavor of the veal without masking it, I marinate the chops in a little dry vermouth, which is made from herbs, for about 30 minutes. Fire up the grill and cook approximately 4 minutes per side for medium-rare. Perfect!
