MENU AND RECIPES FOR
MEMORIAL DAY

http://teriskitchen.com/memorial.html

Memorial Day marks the unofficial beginning of summer and backyard grilling. What better way to kick off the season than with a menu including American recipes for Hamburgers, Hotdogs, and all the traditional side dishes. Don't forget the Potato Salad, Pasta Salad, Baked Beans, Deviled Eggs, Pickles, Chips and a "to die for" All-American dessert, Whoopie Pies. The good news is that most of the recipes can be prepared a day or more ahead of time so you can enjoy the celebration and outdoor festivities. For other grilling choices, search the Outdoor Cooking Page.

Easy Three-Bean Baked Beans

Deviled Eggs with Olives

Assorted Pickles and Chips

Whoopie Pies

Preparation Notes: Most everything on this menu can be prepared ahead. The Whoopie Pies can be made several days ahead and stored in an airtight container in the refrigerator. If necessary, you can even make them several weeks ahead and store in the freezer. The Three-Beans Baked Beans can be made and baked several days ahead, cooled and refrigerated, then reheated in a 350° F oven for about one hour. Alternately, they can be prepared the day before up to the point of baking, then baked that day. The Potato Salad can be made the day before and refrigerated. Set it at room temperature for about thirty minutes before serving. The Hamburger can be seasoned (don't add the salt until grilling time) and formed into individual patties a day ahead and refrigerated. The Chili Sauce can be made one or two days ahead, refrigerated, and then reheated. As with the Whoopie Pies, you could even make it several weeks ahead and freeze until needed. Although Deviled Eggs and Pasta Salad are good the next day, I think they are best made the morning of the event. If it is more than one hour ahead, refrigerate, then bring to room temperature before serving. About one or two hours before, prepare toppings for the burgers and hotdogs. Choices are lettuce leaves, sliced tomatoes, onions (sliced for the burgers and chopped for the hotdogs), pickles, hot peppers and cheese slices or crumbles. Don't forget to put out the mustard, ketchup, mayonnaise and relish. That's it. All that's left to do is grill the burgers and hotdogs and enjoy the day!
