Oktoberfest originated in 1810 in Munich, Germany, as part of a royal wedding celebration. It became so popular that it is now celebrated in many areas throughout the world, especially those with a substantial population of German decent. In modern-day Munich, the festivities, which include music, dancing, lots of beer and great food, lasts about 16 days. In this country, it appears to be celebrated any time in October. In keeping with tradition, I have prepared two delicious German menus, the first of which is very casual and simple, with Brat and Sauerkraut Sandwiches, German Potato Salad, Pickled Beets and Apple Dumplings. The second is a bit more formal, including Sauerbraten, Spaetzle, Braised Red Cabbage, Buttered Beets and Cherry-Chocolate Cream Torte, my very easy version of a Black Forest Cake. Serve either meal with dark beer or dry Rhine wine.
