SERVES 8 AS A SIDE DISH
This is quick and easy, as well as healthy and very good. I prefer it as a side dish, but you could use it as the main dish.
INGREDIENTS
Cook the pasta according to package directions for al dente. Drain, reserving some of the water.. Add the oil and garlic to pot and sauté about 1 minute. Return the pasta to the pot and toss. Add salt, pepper, lemon juice, zest, parsley and enough reserved water to moisten. Toss again. Serve, passing the cheese separately.
Note: This pasta can be made up to an hour ahead, set aside at room temperature, and reheated in microwave.
