I love this orzo pilaf recipe. The rice-shaped pasta makes a quick, easy and delicious Italian-inspired side dish that complements a variety of main dishes. - 1 tablespoon butter, preferably unsalted, or olive oil
- 1/2 cup finely chopped onions
- 1/2 cup finely chopped red bell peppers
- 1-1/2 cups orzo, white or whole wheat
- 2 cloves garlic, minced
- 2-1/2 cups water
- Salt and pepper to taste
- 2 tablespoons freshly grated Parmesan cheese
Heat the butter or oil in a medium saucepan over medium-high heat. Add the onions and peppers and sauté until softened, about 5 minutes. Add the orzo and cook, stirring often, until golden. Add the garlic and cook one more minute. Add salt, pepper and then the water. Bring to a boil, cover, reduce heat to medium-low and simmer until all of the water is absorbed, about 15 minutes. When done, stir in the Parmesan cheese and taste for seasoning. Serve immediately.
