ORZO PILAF

SERVES 4

I love this. It's quick, easy and goes with a variety of main dishes. The red peppers add just a touch of sweetness.

INGREDIENTS

Heat the butter in a medium saucepan over medium-high heat. Add the onions and peppers and sauté until softened, about 7 minutes. Add the orzo and cook, stirring often, until golden. Add the garlic and cook one more minute. Add salt, pepper and then the water; bring to a boil. Cover, reduce heat to medium-low and simmer until all of the water is absorbed, about 15 minutes. When done, stir in the Parmesan cheese.
