MULTI-GRAIN PIZZA DOUGH

This is a nice change of pace from a regular pizza crust. I especially like it with pizza that has cooked greens in the topping. It can be made in a bread machine, heavy-duty mixer or by hand. If you prefer a white crust, substitute all-purpose flour for the grain flour.

INGREDIENTS

1 POUND

(Makes one 12-inch round or 15 x 10-inch pizza)

  • 3/4 cup warm water
  • 1 tablespoon olive oil
  • 1-1/2 teaspoon salt
  • 1-3/4 cup all-purpose flour
  • 1/2 cup 8-grain or other grain flour
  • 1 teaspoon sugar
  • 1 teaspoon active dry yeast

2 POUNDS

(Makes two 12-inch round or 15 x 10-inch pizzas)

  • 1-1/2 cup warm water
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 2-3/4 cups all-purpose flour
  • 1-1/2 cups 8-grain or other grain flour
  • 2 teaspoons sugar
  • 2 teaspoons active dry yeast

Make dough according to the bread machine directions for pizza or regular dough setting. Check after 5 minutes and add all-purpose flour if the dough is sticky. Dough can be used immediately or refrigerated until needed. It can also be frozen for several months.
