I suppose that many of us make more chicken than any other meat for the obvious reasons: it is healthier, economical and very versatile. I know that, when I don't want to think about what to make for dinner, I often have chicken and use one of the old "standby" recipes. Turkey is equally versatile, so don't save it just for holidays. Game birds, such as quail, squab and cornish game hen (which is actually just a small chicken), are delicious and make easy, elegant presentations for special dinners. If they are not available in your grocery store, there are reputable online stores from which they can be purchased. I have included a recipe for turkey stock, as well as some of my favorite stuffings, dressings, sauces and relishes that may be served as side dishes.
