GRILLED CHICKEN BREASTS

SERVES 4

Quick, easy, light and very good.

INGREDIENTS

Place chicken breasts in shallow dish. Place the remaining ingredients in a small bowl and combine well with fork or small whisk. Pour marinade over chicken, being certain to get some on both sides of breasts. Let stand for at least 30 minutes. Meanwhile, heat grill. (It's a good idea to lightly spray or brush the cooking grate with oil before heating to prevent sticking.) Grill the breasts until just cooked through, turning once to brown both sides. Remove from grill and serve immediately.

Note: Broiling or even pan frying works equally well.
