MAKES ABOUT 4 CUPS
This is almost like the packaged coatings but you control the seasonings. It works with chicken, fish and pork. See Oven-Fried Chicken.
INGREDIENTS
Place bread crumbs in large bowl. Add oil and combine well with a fork. The oil must be evenly distributed throughout the crumbs. Add salt, pepper and other seasonings as desired.
Moisten chicken pieces, fish filets or chops with a little water. Place coating mixture in large plastic bag. Add meats and shake to coat. Shake off excess coating and place in baking dish in one layer.
Note: This makes enough coating mix for 20 pieces of chicken or 30 fish filets. The recipe can be halved.
