Butterscotch Haystacks Candy

Makes about 36 candies

When I found this recipe, it was so old I could barely read the writing. I got it from a student when I first starting teaching. Somehow, I managed to keep it all those years, even though out of sight, and the candy is every bit as good as I remember. I have seen similar recipes, some that use peanut butter instead of peanuts. If you like butterscotch, this recipe is very good and easy enough to make with your kids for Halloween, Easter or any occasion.

Ingredients

Place the butterscotch chips in a medium bowl. Place over a pot of simmering water, making certain the water does not touch the bottom of the bowl. Stir constantly until melted. Remove from heat and quickly stir in the noodles and nuts. Drop in desired sizes, about one tablespoon each, onto parchment or wax paper. Refrigerate until well-chilled, at least several hours. Keep refrigerated in a covered container until serving.
