Crispy Baked Rice Squares

This is an easy, healthy and delicious side dish recipe for a sandwich or any meal. I usually make it when I have leftover rice pilaf. I prefer to use brown basmati for its nutty flavor and whole grain goodness, but you can make rice squares with any leftover rice. It can also be prepared using rice cooked from scratch or plain leftover rice, but you will need to add vegetables as in a pilaf. This recipe can be made in any amount.
Ingredients
- 1 large egg white
- 1 cup leftover rice pilaf (see the similar and related recipes)
- 2 teaspoons dried breadcrumbs, preferably multigrain or whole wheat
- 2 teaspoons freshly grated Parmesan cheese
Beat the egg white in a medium bowl. Add the remaining ingredients and stir to combine. Place on a baking sheet lined with parchment paper, or foil that has been sprayed lightly with cooking spray. Pat thinly into a rectangular shape. Refrigerate for at least one hour or overnight. Preheat oven to 450° F. Bake for about 10 minutes to heat, then place under the broiler until brown and crispy. Cut into squares or rectangles and serve hot or room temperature.
