Recipes for Leftover Macaroni and Cheese

Macaroni and cheese is so good the first time around, I look forward to a repeat. However, since there usually is not enough for everyone, I like the following two makeover methods best. They were created to use my Nana's stovetop macaroni and cheese, which is in the similar and related recipes, because that is the version I make most often. However, any macaroni and cheese you have on hand will work as well.
- Skillet Dish - We call this 'Goulash'. The name for this recipe came from my Nana Ranck. This was her way to stretch leftover macaroni and cheese to make enough to feed her family. We still do it today. Brown some ground beef in a skillet. Add chopped onions, tomatoes and basil. Add the leftover macaroni and cheese. Heat on low just until hot. Taste for seasoning. Add Parmesan cheese. This is similar to a homemade 'Hamburger Helper'.
- Casserole - My typical macaroni and cheese dinner includes fried sausage and baked tomato halves, both of which are in the similar and related recipes. One time I had quite a lot leftover because someone did not show up for dinner. Now I sometimes make extra so that I can make this delicious dish with the leftovers. Chop the leftover sausage and tomatoes, mix them with the leftover macaroni and cheese and add 1 cup of frozen peas. Place it all in a dish and microwave until hot. Top with extra shredded cheese and return to the microwave until melted. This can also be done in the oven, covered with foil. It makes a delicious, easy and cheesy macaroni casserole that can be made with any amount that you have leftover.
