Recipes for Leftover Roasted or Braised Meat and Poultry
http://teriskitchen.com/leftovers-recipes/leftover-roasted-meat-and-poultry.htmlAny type of leftover roasted or braised meat or poultry can be used in the presentations listed below.
- Barbecue Sandwiches - Cut roasted meat into small chunks or shreds to make barbecue sandwiches. Use your favorite store-bought or homemade barbecue sauce, or try Hilda's Barbecue Sauce, which also uses some of the gravy.
- Appetizer or Party Food - Slice meat very thin and use in Deli Meat Roll-Ups with Cream Cheese and Horseradish Filling. This is especially good with roasted beef.
- Hash - This idea comes from Ruth Maddox of Duncan, Oklahoma. Ruth writes: "Planned leftovers are great. Our family favorite is hash. To make, peel and cube potatoes and chopped onion. Cook until tender. Add cubed leftover roast, gravy if you have it, heat and serve. There are two of us, but I always cook for six or more, especially vegetables. The trick is not to serve them the next day, or the next. Wait until the third day, serve them on two plates, cover, and heat in the microwave. If you end up with one serving, use a serving of another vegetable, and let your spouse choose his or her favorite. My doctor recommends that we would be wise, especially if we have food allergies, not to repeat a food in less than three days."
- Stuffed Bread - This idea comes from Tiffany. Tiffany writes: "I have lots of leftover recipes. This stuffed bread is my family's and my favorite. Use any leftover roast with potatoes and carrots. Mix all meat and veggies together; add gravy but not too much or it will be too runny. I make a stiff whole wheat bread (you can use a frozen dough, thawed). I add mushroom and cheese then roll the bread to desired size. Put some filling on one half of the dough fold it over pinch to seal. Spray with butter spray and sprinkle with garlic salt or any other seasonings and bake until done, about 20-30 minutes. I do this with any leftover meats. My kids like to make their own and add what they want."
- Shepherd's Pie - Use the leftovers from a pot roast, like the recipe in the similar and related recipes. Cut the meat and vegetables into small pieces, place in the bottom of an appropriately sized baking dish and add some gravy if desired. Then top with leftover or freshly made mashed potatoes. Brush the potatoes with melted butter. Bake in a preheated 350° F oven until lightly browned and bubbly, about 15 minutes.
- Meat Pie - Use your favorite double-crust pastry. Fill with leftover meat, vegetables and gravy or broth. Bake in a preheated 400° F oven for about 40 minutes or until bubbly and golden brown on top.
- Stir-Fry - This recipe comes from Doug Maynard. It is a quick and easy recipe for Stir-Fried Leftover Pork using leftover boneless pork chops, but it will work as well with other meats.
