Sautéed Pork with Lemon-Garlic Sauce

This recipe for pork with lemon and garlic sauce is similar to veal piccata, which is in the similar and related recipes. It is as quick as a stir-fry and an easy, light and delicious main dish. Make it on a busy weeknight and serve over pasta, lightly buttered noodles or rice.
Ingredients
- 2 tablespoons olive oil
- 1 pound pork loin or tenderloin, cut into strips
- 3 large cloves garlic, minced
- Salt and pepper to taste
- 1/4 cup dry white wine
- Juice of 1 large lemon
- Freshly chopped parsley for garnish
Heat the olive oil in a large skillet over medium-high heat. Season the pork with salt and pepper and add to the pan. Sauté until starting to brown. Add the garlic and continue to cook until lightly browned and done, about 5 minutes. Pour in the wine and reduce slightly, about 1 minute. Add the lemon juice and cook another minute. Garnish with the parsley, spoon on top of pasta, rice or noodles and serve immediately.
Notes: Do not overcook the pork or it will become tough. If desired, chicken or veal strips can be substituted for the pork.
