Homemade Thousand Island Dressing

http://teriskitchen.com/salads-recipes/homemade-thousand-island-dressing.html

Makes about 1-2/3 cups

As I recall, thousand island dressing was one of my favorites when I was young. What kid would not like it? It is a creamy combination of mayonnaise and chili sauce with sweet pickle relish and chopped hard-cooked eggs. Back in the day, thousand island dressing was especially popular on iceberg lettuce wedges. It is also good with romaine or any hearty salad greens. Although my tastes have changed through the years, I still love this recipe, especially as a spread for Classic Reuben Sandwiches, or in my Thousand Island Cabbage Slaw, both of which are in the similar and related recipes. This quick and easy recipe can be made in any amount.

Ingredients

Combine all ingredients and blend well. Use immediately or refrigerate for up to 3 days.

Notes: This was my mother's recipe and is representative of a classic thousand island dressing. I prefer to substitute reduced fat sour cream for up to half of the mayonnaise to mellow the flavor and smooth out the texture.
