What? Onion sandwiches? Absolutely. If you like onions, you must try one. In the old days, we used regular yellow onions. Now that we can get sweet onions, the sandwich is even better. In my family, this was usually prepared as a snack, but it can be served as a light lunch, perhaps with a salad on the side. Just make sure you do not have a date or appointment afterwards. I tried several times to add lettuce, tomato, pickles and/or cheese to the sandwich, all of which is good, but I prefer it with just the onion.

Ingredients

Spread one side of each piece of bread with butter. Top one buttered side with onion slices. Season with salt and pepper, then top with the other slice of bread. It is that quick and easy.

Notes: My mother told me that some of the people in the family used mayonnaise instead of butter. I prefer the butter, but it is your choice. If desired, regular onions can be soaked in cold water for about thirty minutes for a milder flavor, then patted dry before using. That is not necessary with most sweet onions.
