Biscuit Burgers

Makes 20 biscuit burgers

Peter writes: "I am sending an interesting recipe that I have had good luck with at carry-in (potluck) dinners and parties. Hope other members will enjoy it."

Ingredients

In a large coated skillet, over medium heat, brown the ground beef for about 5 minutes. Add chopped onions, chopped peppers, salt, pepper, marjoram, and thyme. Continue to cook until completely cooked through, about 10 minutes. Drain off any excess fat and return skillet to medium-low heat. Add the diced tomatoes, tomato paste, wine, barbecue sauce, and soy sauce. Continue to cook for about 15 minutes more and then set aside.

Preheat oven to 400° F. Lightly oil muffin pans. Open biscuits and separate. Flatten each biscuit to about 1/8-inch thick and about 5-inches round. Place in the muffin pan and form well. Add about 1-1/2 tablespoons of the cooked ground beef mixture to each biscuit. Press mixture into bottom to force sides up to top. Dust top of each filled biscuit with Parmesan cheese. Bake the prepared biscuits for 10 minutes. Remove from the oven and place a 1-inch square of Swiss cheese on top of each biscuit. Return to oven and continue to bake for about 10 to 15 minutes more until biscuits are done. Remove from the muffin pans and place on serving dish.

Notes: To prepare as an appetizer use the smaller biscuits and bake in miniature muffin pans.
