Mushroom-Rice Dressing

Felicia writes: "I am a mushroom lover. I absolutely LOVE mushrooms! My husband and children do not eat them. So, I usually cook mushrooms alone. I sauté them with onions on the side instead of in the main dish. Today I got really bored with the way I cook mushrooms. So, I got a little creative. The recipe I made is below. I'm sure there are a lot of picky people out there or at least one or two per family that eats mushrooms when the rest of the family does not. This recipe takes 15 minutes to make and you can use it as a side dish instead of plain sautéed mushrooms."

Ingredients

Heat pan on medium. Add cooking spray with chopped onions. (If using olive oil, just cover bottom of pan). Brown onions in spray. You may need to add more spray as you brown. Once browned, add mushrooms and more spray. Cover and reduce heat to medium-low. Stirring occasionally, cook for as long as desired. I cook them for about 5 to 10 minutes. Once done, add cooked rice to the mushroom pan with Parmesan and mix well. Voilà!!

Notes: Browning the onions is the key to this flavorful dish. You can make this a main dish by adding your favorite meat. If you do so, add your meat after the onions have browned. Don't add your mushrooms until 10 minutes prior to being done.
