Baked French Fries

There are times French fries are the best choice to go with a meal, but you do not feel like going through the frying process or you want to keep it lighter. Instead of reaching for that store-bought bag in the freezer, why not make your own? The only work involved with making oven-baked fried potatoes is scrubbing and cutting, which takes just a few minutes. They taste much better and you get to control the ingredients. This recipe makes a quick, easy and delicious side dish that is well worth the little extra effort.

Ingredients

Preheat oven to 475° F. Lightly grease or spray two large baking sheets. Scrub or, if preferred, peel potatoes. Cut into 1/4 to 1/2-inch sticks, depending on desired thickness, by first making slices, then stacking the slices, about 3 at a time, to cut into sticks. Place in bowl; toss with oil and salt until evenly coated. Place in one layer on baking sheets. Bake for 15 minutes. Turn fries with spatula and switch racks in oven. Continue to bake until well browned and crispy, about 25 minutes depending on size. Sprinkle with additional salt to taste and serve immediately.

Notes: The potato used most often for baked fries is the russet or baking potato, but I prefer Yukon gold. This recipe can be made in any amount desired.
