Amandine is a French term that means prepared, served or garnished with almonds. The most popular amandine dishes are green beans and sole or trout. I love green beans that are simply cooked and lightly buttered, such as the Buttered Green Beans in the similar and related recipes, but the almonds in this quick and easy recipe add a nutty flavor and texture. Serve for a family dinner, special occasion or elegant entertaining.

Ingredients

Cook beans in lightly salted boiling water until tender-crisp, about 10 minutes depending on size. Drain well. Return to pot; add butter and lemon juice. Stir until butter is melted. Add salt, pepper, and almonds; stir well to combine. Serve immediately.

Notes: To toast the almonds, place them in a small dry skillet or the pot in which you will cook the beans. Place over medium heat, stirring often, until golden. Alternately, place them on a sheet pan in a preheated 350° F oven for about 8 minutes. Either way, watch them closely so they do not burn.
