Roasted Cauliflower

Cauliflower is one of the many vegetables that are delicious when roasted with just a little seasoning and olive oil. This is a quick, easy and healthy side dish recipe for a busy weeknight, special occasion or entertaining. Since it is equally good at room temperature, it is perfect for something different and unexpected on a buffet or at a potluck event. The recipe can easily be made in any amount needed.
Ingredients
- 1 medium head cauliflower, broken into medium-sized florets
- Salt and pepper to taste
- 1 teaspoon dried marjoram leaves
- About 1 tablespoon olive oil
- Freshly grated Parmesan cheese (optional)
Preheat oven to 450° F. Place the cauliflower on a large, shallow-sided baking sheet, lined with foil if desired for easy clean-up. Season with salt, pepper and marjoram. Drizzle all over with the oil. Toss well to combine, adding a little more oil if the cauliflower looks very dry. Spread out on the pan so there is just one layer. Roast until lightly browned and tender, about 30 minutes, covering lightly with foil if it starts to brown too much. If desired, sprinkle with a little Parmesan cheese and roast just until melted, about 2 minutes. Serve hot, warm or room temperature.
