Sautéed Green Beans with Olive Oil and Garlic

This is a quick, easy and delicious recipe for fresh green beans. Sautéing and lightly browning the beans in the beginning adds depth of flavor, similar to roasting or grilling. Serve on a busy weeknight or for a special occasion.
Ingredients
- 2 tablespoons olive oil
- 1 pound green beans, cleaned and stem tips removed
- Salt and pepper to taste
- 1-1/2 teaspoons dried marjoram leaves
- 2 tablespoons minced fresh garlic
- About 3 tablespoons water, more or less as needed
- 1/2 teaspoon fresh chopped marjoram leaves (optional)
Heat a medium skillet over medium-high heat. Add the olive oil, then the beans, salt and pepper. Sauté until lightly golden, about 3 minutes. Add the dried marjoram and garlic; sauté another minute. Add just enough water to provide a little moisture to prevent additional browning. Cover, reduce heat to medium, and cook 15 to 20 minutes or until beans are the desired tenderness. Uncover and cook until any moisture is evaporated. Garnish with the optional marjoram. Serve immediately.
Notes: If you prefer beans that are a little crispier, the water can be omitted. Continue to cook the beans over medium heat until the desired doneness. That method works best with young, tender beans that require less cooking time. This is very good hot, warm or room temperature, so it can be served as a side dish on a buffet or for a potluck event.
