Steamed Brussels Sprouts with Olive Oil and Garlic

I love Brussels sprouts and, although I prefer fresh, it is one of those vegetables that freezes well and the store-bought frozen sprouts, especially baby varieties, are very good. I often microwave them and add butter, but this is my favorite preparation. You can use the same microwave method for cooking fresh Brussels sprouts, adjusting the cooking time as needed. This recipe can be made in any amount needed.
Ingredients
- 2 tablespoons olive oil
- 2 teaspoons minced fresh garlic
- 1 bag (about 16 ounces) frozen baby Brussels sprouts
- Salt and pepper to taste
Place the olive oil and garlic in a small microwavable bowl. Microwave on high for about 40 seconds, depending on the microwave wattage, or until garlic is slightly tender, being careful not to brown. Set aside. Cook sprouts in microwave according to package directions, adjusting time as needed depending on microwave wattage and taste (see notes below). Drain well. Add the olive oil, garlic, salt and pepper to the sprouts; stir well. Return to microwave and cook on high for one more minute.
Notes: I like my sprouts a little more tender than the usual recommendation on the package, so I microwave for an additional minute or more. If you prefer the opposite, check them sooner than indicated. As stated above, the time needed also depends on microwave wattage.
