Steamed Spinach with Garlic

I love spinach. This is based on my recipe for Sautéed Spinach with Garlic, which is in the similar and related recipes, but I substitute frozen spinach for the fresh and steam it in the microwave. I can make it when I want a cooked vegetable and do not have fresh on hand, since I always have spinach in the freezer. It is especially convenient when serving even a small group of people because it takes a lot of fresh spinach to make a sufficient amount of cooked. Frozen spinach is almost as tasty as fresh. It is also more economical, so it is the perfect convenience food. All it needs is some good seasoning for a quick, easy, healthy and delicious side dish.

Ingredients

Place spinach in a large microwave-safe bowl with lid. Add about 2 tablespoons water. Cover and cook on high for 6 to 8 minutes, depending on microwave wattage. Stir occasionally several times while cooking. When hot, drain well.

Place the garlic and olive oil in a small microwave-safe bowl. Cover with a paper towel and cook on high for about 40 seconds or until the garlic is softened, stirring occasionally and making certain the garlic does not brown. Pour the garlic and oil over the drained spinach. Add salt and pepper to taste. Stir well to combine. Return to microwave and heat for another minute. Serve immediately or cover to keep hot, returning to the microwave for another minute to reheat if necessary.
