CREAMY COLE SLAW

SERVES 4 to 6

I can't imagine how many versions of cole slaw there are. This is one of my latest favorites. It is very easy to make and, as with many salads with a mayonnaise base, I like the addition of the sour cream. Normally, I would make it with regular green cabbage. One time I used part of a Napa cabbage and it was just as good.

INGREDIENTS

Place the cabbage, green peppers, onions and carrot in a large bowl. In a small bowl, combine the remaining ingredients. Taste for seasoning. Pour over the vegetables and stir well to combine. Slaw may be served immediately, but is even better if allowed to stand, covered, in the refrigerator for several hours.
