ONE EGG MAKES ONE SANDWICH
My mother used to make these sandwiches when we were kids. They are so good and another alternative to the same old sandwich. Serve for breakfast, lunch, dinner or a snack.
INGREDIENTS
Choose a skillet according to the amount of eggs you are making. Heat over medium-high heat. Add enough butter to lightly coat the bottom (or use cooking spray). Break the eggs into a bowl, then add to the pan. With a fork or spatula, stir the eggs until the whites and yolks have almost combined. Cook the eggs just until the bottom has set. Top with cheese, onion and tomato, salt and pepper. To finish, you can either put on a lid until the tomato and onion are warm and cheese has melted or you can place the pan under a heated broiler until the tomato is lightly browned. Slice into sandwich-size portions. Place in sandwich bread spread with mayonnaise and top with optional bacon, if desired.
