LAMB SANDWICH WITH CARAMELIZED ONIONS AND CHEESE

 

Cut some leftover Roasted Leg of Lamb into 1/4 to 1/3-inch slices. Caramelize some onions. Reheat the lamb over very high heat in a grill pan or skillet sprayed with olive oil. Cut hardcrust rolls in half. Butter the inside and grill until lightly browned. Place the lamb in the rolls. Top with provolone cheese and onions.
