Roasted Red Peppers Sandwiches with Salami and Asiago Cheese
Makes about 4 sandwiches
It just does not get any better than this Italian-inspired sandwich. I love roasted red peppers and they are so good with salami and cheese. I like to roast my own, but you can use store-bought roasted red peppers in a jar or from the deli. Purchase a good quality salami. One of my favorites is sopresatta. In this sandwich, it is best if the meat is not sliced too thin. And you definitely want a good sharp cheese, preferably Italian, that can stand up to the other flavors. If you are serving this sandwich for a mixed crowd that includes some vegetarians, the peppers and cheese make a delicious sandwich on their own. As a matter of fact, I love that sandwich, which is in the similar and related recipes links, as much as the salami version. This recipe is quick, easy and can be made in any amount desired.
Ingredients
- 2 large red peppers, roasted, peeled and cut into wide strips (see 'how-to' in the similar and related recipes links)
- 2 large cloves garlic, minced
- 1 tablespoon chopped fresh basil (or 2 teaspoons dried)
- Salt and pepper to taste
- 1 tablespoon olive oil
- 4 medium-sized crusty rolls
- Sliced salami
- Sliced asiago, extra sharp provolone, or similar cheese
- Mayonnaise (optional)
In a medium bowl, mix together the roasted peppers, garlic, basil, salt, pepper and olive oil. Let set about 15 minutes for flavors to blend. Cut the rolls in half horizontally and, if desired, pull out some of the inner bread. Place the peppers on the bottom half. Top with some salami and cheese slices. If desired, spread mayonnaise on the remaining half of the roll and place on top of sandwich. Enjoy!
