Turkey Tacos

Makes about 12 tacos

If, like me, you love the flavor of ground turkey, you will love this recipe for turkey tacos. They are quick and easy to make and a bit healthier than beef tacos. I prefer them with simple toppings of homemade taco sauce, which is in the similar and related recipes links, diced fresh tomatoes, shredded spinach and arugula, sharp cheddar cheese, and a little yogurt. However, you can use the more traditional taco toppings, including salsa, sour cream, guacamole and shredded romaine or iceberg lettuce. The amounts of the spices are approximate. You can add more or less to taste, including hot chiles or cayenne if you want some heat.

Heat a 12-inch skillet over medium-high heat. Add the olive oil. Add the turkey and sauté until browned, adding the onion, bell peppers, salt and pepper when it just starts to brown. Add all the seasonings and the taco sauce. If needed, add a little water for moisture and to blend the spices. Reduce heat to low; cover and simmer about 15 minutes, adding a little more water if it gets too thick. Taste for seasonings. Heat taco shells according to package directions. Serve, garnishing as desired.

Notes: I use a 1.3 pound pack of 93% lean ground turkey. If your store sells the turkey in 1 pound packs, that will work without changing the other ingredients. Just do not add water until you are certain you need more moisture.
