Baked Fish Fillets with Parmesan and Breadcrumb Crust
This oven-fried fish recipe is a quick, easy and delicious alternative to regular frying. The seasonings in the breadcrumb crust add a lot of flavor. Use any firm, white-fleshed fish that is fresh and available that day.
- 1 cup unseasoned dried breadcrumbs
- 1 teaspoon garlic powder
- 1 tablespoon dried parsley leaves
- 1/4 cup freshly grated Parmesan cheese
- 1/4 teaspoon sweet paprika
- Salt and pepper to taste
- 4 firm, white-fleshed fish fillets, such as catfish or tilapia, about 6 ounces each
- Juice of 1 lemon
- Cooking oil spray
- Lemon wedges for garnish
Preheat the oven to 425° F. Line a shallow-sided baking sheet or pan with foil for easy cleanup. Place in the oven to preheat for 5 minutes. Meanwhile, combine the breadcrumbs, garlic, parsley, cheese, paprika, salt and pepper on a large plate. Rub each fillet with lemon juice, then dredge in the crumb mixture to lightly coat. Grease the pan lightly with cooking oil spray. Place the fish on the pan and spray the tops with cooking oil spray. Bake until cooked through, about 15 minutes, depending on thickness. Serve immediately, garnished with lemon wedges.
