MAKES ABOUT 1-1/4 CUPS
Once you get used to charring peppers, the possible uses are endless. I love this sauce. It is easy and so versatile. Add more cream for a more mellow flavor. Add garlic or herbs for a more robust flavor. It can be gently heated or served room temperature. A little goes a long way. The amount it yields depends on the size of the peppers and the amount of cream used.
INGREDIENTS
Char, peel and clean the peppers (see Charring Peppers for instructions). Place in blender or processor and process until smooth. Add cream, salt and pepper; blend well. Drizzle over seafood, chicken or other vegetables.
