EASY GRILLED SHRIMP

SERVES 2

This is quick, easy, light and delicious. Although I do this on a hot grill so it picks up some of the smoky flavor, you could use a skillet over medium-high heat and it will be just as good.

INGREDIENTS

Place everything except the parsley in a foil baking dish. Place on a grill over high heat. Sauté, stirring occasionally, until shrimp turn pink, about 5 minutes depending on size. Sprinkle with the parsley and serve.
